We are happy to share our recipe for beluga lentil salad with you. Because it can be prepared in advance and even tastes delicious when cold. And yes, it is healthy and filling too. Enjoy!
- 200g beluga lentils
- 200g halloumi (or feta)
- 1 paprika
- 1 avocado
- 100g cherry tomatoes
- 100g chinese cabbage
- 50g dried tomatoes in oil
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp mustard
Wash the lentils in a sieve, drain and cook with twice the amount of water until al dente.
Cut the halloumi into small cubes and fry in a pan with 1 tablespoon of olive oil.
Cut the avocado, peppers, cherry tomatoes, chinese cabbage and dried tomatoes into small pieces and add to the cooled lentils together with the halloumi.
Mix the olive oil, lemon juice and mustard into a dressing and mix into the salad. Season with salt and pepper and serve lukewarm or cold.
