Colorful Summer Rolls

Do you know that too? When it's cold and gray outside, we sometimes long for bright colors on the dining table. Colorful rolls of fortune on brightly colored plates always brighten our spirits.

The lucky rolls can be filled with all sorts of colorful vegetables - there are actually no limits to what you can do. Depending on your taste, they can also be supplemented with marinated tofu and herbs.

 

Ingredients for the lucky rolls

  • 1 Pkg. travel paper sheet
  • 50g rice noodles
  • 1 carrot
  • 1/2 Salatgurke
  • 1/2 yellow peppers
  • some red cabbage
  • 1 Avocado
  • 1/2 Mango
  • 2 Eggs
  • 2 tbsp peanuts
  • 1 EL Sesame
  • Kräuter (with B. Minze, Koriander)

 

Ingredients for the dip

 

  • 3 tablespoons peanut butter
  • 2 cloves of garlic
  • small piece of ginger
  • 3 tbsp soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 3 tablespoons water

 

Preparation

 

Boil eggs until soft, peel and cut into slices. Soak the glass noodles in boiling water and strain after a few minutes. Cut vegetables and fruit into strips.

Wet a sheet of rice paper all over under running water or immerse in a bowl of water. Place the rice paper sheet on a plate and place the herbs and sesame seeds in the middle. Fill with the remaining ingredients as desired.
Do not use too much filling, otherwise the rolls can no longer be closed well.

The rice paper should be soft by now and fold easily. To do this, fold it in from the top and bottom towards the middle and then carefully roll it up compactly.

For the dip, peel and finely chop the ginger and garlic. Put all the ingredients in a saucepan and bring to a simmer over low heat, stirring constantly.

Arrange the lucky rolls together with the dip on a large plate and decorate with herbs and sesame.
