Are you looking for a fresh and cool dessert for hot summer days that is not heavy on the stomach? Our sweet and sour lemon granita is perfect for this, is easy to prepare and can be prepared up to three days in advance.

Ingredients for 4 servings
- 250ml of water
- 120g sugar
- 250ml freshly squeezed lemon juice
- Zest of 2 unwaxed lemons
- 1 pinch of salt
Preparation
Bring the water and sugar to the boil in a saucepan and simmer for 10 minutes until the liquid thickens slightly.
Finely sift the freshly squeezed lemon juice and add to the syrup along with the zest and salt. Mix well and let cool.
Empty the cooled liquid into a flat container and place in the freezer with the lid on.
After an hour, loosen the mass with a fork and crush the ice crystals, then freeze again. Repeat this step until a fine ice snow has formed. The granita can be prepared up to three days in advance.
Arrange in chilled bowls or hollowed out and frozen lemon halves and decorate with lemon zest.
