Coconut Raspberry Balls

These pretty balls with juicy dates are vegan, quick to prepare and also much healthier than most Christmas cookies. They don't need to be baked at all and taste wonderfully sweet and fruity even without added sugar. They are perfect as a small treat or for a quick energy boost.

 

ingredients

  • 200g juicy dates (e.g. Medjool)
  • 125g raspberries (fresh or frozen)
  • 100g fine oat flakes
  • 50g almond butter (alternatively coconut or another nut butter)
  • 30g coconut flakes + a few grams for rolling

 

preparation

Chop the pitted dates in a food processor. Alternatively, they can also be cut into very small pieces and processed with a hand blender.

Add the crushed raspberries, rolled oats, almond butter and coconut flakes to the dates and mix well. Shape the mixture into small balls with slightly damp hands and roll them in the coconut flakes.

Put in the fridge for an hour. Refrigerated, the balls stay fresh for about a week.
