Quinoa Chocolate Bites

Our recipe for puffed Quinoa Chocolate Bites is a healthier and crunchy alternative to store-bought candy bars. They're super easy to make and can be stored in the fridge for up to two weeks. However, we have to admit: they never have to wait that long with us!

 

Ingredients

  • 200g light or dark chocolate
  • 1 tbsp coconut oil
  • 2 tbsp almond butter (alternatively peanut butter)
  • 125g puffed* quinoa

 

Preparation

Melt the chocolate together with the coconut oil in a double boiler. Stir in the almond butter and mix in the puffed quinoa.

Line a square mold with baking paper, fill in the chocolate quinoa mixture and smooth it out a little.

Leave to set in the freezer for an hour. Then carefully cut into 5cm squares and store in the fridge.

*You can find puffed quinoa in many larger supermarkets. Alternatively, you can just puff it yourself. To do this, heat an empty saucepan over medium-high heat on the stovetop until the bottom is hot. Then turn off the heat and add the quinoa grains to the pot. Make sure there aren't too many - they should cover the bottom at most. After a few seconds, the grains will start to crack. When most of them have burst, take them out of the pot quickly to avoid burning them. By the way, puffed quinoa also tastes fantastic as a cereal topping.
